Winter cookies..










In the past few days it's been pretty cold and I've been in the mood of making my own kind of 'Winter cookies'. The result were these healthy & delicious #nobake Pumpkin Spice Protein Balls - packed with peanut butter and lots of Christmas spices like cinnamon, ginger, nutmeg and clove. I have to say they turned out really well and I can't stop snacking on them. That's why I wanted to share the recipe with you :)






  • 3 super ripe bananas

  • 10 Medjool dates

  • 300g peanut butter (I used the pumpkin spice peanut butter below)

  • 150g PB protein powder (I used the organic PB powder below)

  • 100g pumpkin seeds

  • 150g glutenfree oats 

  • Extra pumpkin spice (optional)


























1. Mix the bananas, Medjool dates and peanut butter in a blender till it becomes a doughy texture (if you don't have a Vitamix on hand you can use a hand blender instead).


2. Transfer the PB powder, pumpkin seeds and oats into the batter and mix thoroughly with your hands. Add some extra pumpkin spice if you like.


3. Once the batter has transformed into a thick doughy texture refrigerate for 30 minutes before forming into balls.


STORAGE: The  Pumpkin Spice Protein Balls can be stored in the fridge for 1 week or in the freezer up to 4 weeks.

NOTE: The amount of ingredients makes a huge jar of balls as I like to store them in the fridge or freezer. But you can also do a smaller amount by just using half of the ingredients.
